Kutsinta


How to make Kutsinta / Cutchinta

Ingredients:
  • 2 cups plain flour
  • 3 cups of water
  • 1 1/2 cups brown sugar
  • 1 tsp. lye water (potassium carbonate solution)
  • Freshly grated coconut  to garnish
Cooking Procedure:

1.  In a bowl, mix the plain flour, water, brown sugar, and lye water.  Mix well. 
2.  Spoon the mixture into small muffin pans until 3/4 full.
3.  Steam in a large covered pan for 30 minutes.
4.  Remove from heat. 
5.  Cool before removing from the molds because the edges are still wet and soggy.
6.  Serve with grated coconut on top. 

Cooking tips:
  • It is best to place a towel or muslin (katsa) between the pan and the cover. The cloth will catch the steam and prevent the condensation from falling into the kutsinta mixture which will prevent them from rising properly.
  • Remove the kutsinta from the molds using a spatula or a knife.
