Palitaw


How to make Palitaw /Palitao

Ingredients:

  • 3 cups glutinous rice flour
  • 1 ½ cup water
  • 1 small freshly grated coconut (niyog)
  • 1 cup white sugar
  • ¼ cup toasted sesame seeds
Cooking Procedure: 

1. In a large saucepan, boil about 7 cups of water.

Meanwhile: 

2. Put the rice flour in a mixing bowl,  then add 1 ½ cup water.
  • Knead the rice flour and water to make  a smooth dough
  • With floured hands pinch off about 1 ½ tablespoon of the dough and form into flat oval shaped pieces, use your hand to flatten it. About 2 ½ inches long.
  • Set aside on a dry plate.
  • Repeat with the rest of the dough to make about 20-25 patties   
3. Put the grated coconut in a plate, set aside.
4. Make a sesame-sugar mixture.  

How to make the sesame-sugar mixture
In a warm small pan toast the sesame seeds, stir constantly to prevent burning. Set aside to cool and then mix the white sugar. Do not mix the sugar with the sesame seed when it is hot otherwise the sugar will melt. 

5. Check if the water in the pan have reach boiling point. 
  • Drop the oval-form dough in the boiling water, cook a few pieces at a time, so that they do not stick with each other. 
  • When the dough floats, the Palitaw is cooked, lift it using a slotted spoon.
  • Place the palitaw in the the plate with grated coconut and coat it. Garnish with sugar-sesame seed mixture.
  • Arrange in a serving plate.
