Salted eggs and tomato salad



This Filipino style salad is very simple and easy to make, for people living overseas, you can buy salted eggs at any Filipino Food shops. Salted eggs are called "itlog na maalat', they are duck's hard boiled egg, then cured in warm brine (heavily salted water) for many days. The egg shells are dyed with red food coloring to differentiate it with the regular eggs.

Ingredients:

  • 3 salted eggs chopped coarsely
  • 2 large red ripe tomatoes, sliced
  • 1 small red onion thinly sliced (optional)
  • a dash of ground pepper
  • a dash of lemon
Procedure:
  • Peel the eggs, cut into cube and chopped coarsely.
  • Combine all ingredients in a bowl and mix.
  • Serve cold.
There are different variation to this salad :
  • You can add some sliced green mangoes or add chopped basil or parsley to add more zest.
  • This salad is very simple and easy to make. Salted eggs and tomato salad is the traditional accompaniment for Tinapa (Smoked Fish), a perfect match for grilled pork or any fried or grilled fish.

Salted eggs undergo a process of curing and sold over the counter pre-cooked and ready to eat.

The commercial salted eggs are duck eggs and are dyed entirely red to make them look more distinctive, as they are also packaged, transported, and displayed in egg trays similar to those used for fresh eggs.


Salted eggs and tomato salad goes well with Tinapa (Smoked Fish), a perfect match for grilled pork, or any fried or grilled fish, best to eat with white rice, anytime.
